One of the top side dishes at any summer barbecue is coleslaw! Upgrade all of your summer barbecues with some coleslaw recipes that have been taken to the next healthy and delicious level.
Use Greek Yogurt As The Coleslaw Base
Traditional coleslaw recipes usually contain mayonnaise as the main ingredient in the dressing. Greek yogurt is a healthier option is to replace mayo and keep your other favorite ingredients the same: vinegar, mustard, lemon juice, and whatever seasonings you like to use.
If necessary, use a bit of agave nectar to sweeten things up instead of granulated sugar.
Get Creative With Veggies
Who says coleslaw recipes need to stay firmly in the cabbage and carrot paradigm? Permission granted to get creative and start packing it full of chopped veggies. Go with smaller pieces so that you still have a nice slaw to work with.
Vegetables like onions, broccoli, and cauliflower (and yes, carrots!) add an awesome crunch. Maybe a little jalapeno for spice and chopped tomato just for fun. Feel free to get creative with your own coleslaw recipes!
Consider Fruit and Nut Combos in Coleslaw Recipes
We LOVE adding fruits and nuts to coleslaw! Bonus points if Greek yogurt is used in the dressing! Start with shredded cabbage (green + purple), and add some shredded carrots if you like.
Then, have at it! Our favorite combos: fresh blueberries and sliced almonds, dried cranberries and pecans (or walnuts, or almonds), strawberries and pecans, or dried cherries and walnuts.
